Recipe: Cinnamon Chocolate Oatmeal

Cold weather calls for a bowl of warm cinnamon chocolate oatmeal in the morning. Don’t you think? Imagine sitting at the table while the snow is falling and you have your oatmeal that almost tastes like a warm cup of cinnamon hot cocoa. There’s nothing better than that feeling!

I’m in love with the cinnamon and chocolate flavor combination as it just screams Fall and Winter to me. What’s even better is that cinnamon can benefit those with insulin resistance! It’s a win-win. Concerned about carbohydrates? This recipe contains about 39g of carbs with 6g of that being fiber. When we compare this to a packet of maple brown sugar instant oatmeal, this recipe has twice as much fiber with less added sugar making it more likely to keep you satisfied until lunch time.

Cinnamon Chocolate Oatmeal

A thick, chocolatey oatmeal with added cinnamon for the ultimate Fall or Winter breakfast.

Ingredients
  

  • 1/2 cup old-fashioned oats
  • 3/4 cup soy milk , or any other milk you prefer (for thinner oatmeal see my note below)
  • 2 tsp 100% maple syrup
  • 1 tsp unsweetened cocoa powder
  • 1 tsp ground cinnamon
  • sliced almonds for topping (optional)

Instructions
 

  • In a small pot over the stove, add oats, milk, and maple syrup. Bring to a boil and reduce heat to simmer. Note: If you prefer thinner oats, add an additional 1/2 cup of milk.
  • Cook oats until the milk has mostly been soaked up by the oats and becomes thick. This usually takes about 5-7 minutes. Be sure to stir frequently to prevent the milk from scalding.
  • Once oats are at your desired texture, take them off the heat and mix in the cocoa powder and cinnamon until thoroughly combined.
  • Scoop oatmeal into a bowl and top with sliced almonds for that added crunch. Enjoy!
