Recipe: Spicy Crisp Zucchini Fries

Sometimes it can be difficult to get your vegetables in or maybe you have picky children. Don’t worry, I completely get it! That’s why I created this flavorful recipe. Not a fan of zucchini’s texture? The crispy panko coating helps with that. Pair these with my homemade ranch dressing!

Ingredients

  • 1 zucchini
  • 1/8 cup flour
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt
  • 1 egg
  • 1/2 cup plain Panko bread crumbs

Preheat oven to 400 degrees F. Prepare a lightly greased, foil lined baking sheet.

With skin in tact, slice zucchini into desired fry length and thickness. In a gallon sized zip bag, add flour and seasonings. Add the zucchini strips and toss until they are evenly coated. Dip each fry into egg and then into panko bread crumbs (I recommend working with 1/4 cup of bread crumbs at a time as it eventually will gum together from the egg). Place zucchini fries on prepared baking sheet. Before placing in the oven, lightly coat fries with a layer of cooking spray to help crisp the top. Bake fries for 15 minutes or until golden brown. Serve immediately and enjoy!

Makes 1 serving. 1 serving is approximately 16 fries.
